What Types of Recipes Can I Make With Leftover Roast Beef?

You can use leftover roast beef in sandwiches, beef stroganoff, fajitas, stir fry, shepherd’s pie, fajitas, etc. The recipes below will make sure you never have to ask what to do with leftover roast beef again!

Cheddar & Roast Beef Frittata (not yet cooked left over roast beef works better)

What you’ll need:

  • Cooking spray
  • 10 eggs (Beaten)
  • 1 can of condensed cream of mushroom soup (10.5 oz)
  • 2 cups of Cheddar Cheese
  • 8 oz of chopped roast beef
  • ½ tsp of black pepper

Preheat the oven to 350 degrees F. Spray cooking spray on a 2-qt baking dish.

Stir the beaten eggs and cream of mushroom soup in a big bowl until well blended. Stir the cheese, roast beef, and pepper into the mixture.

Bake until center is set and gold on the top for about 45 to 50 min.

Leftover Roast Beef Hash

What you’ll need:

  • 3 russet potatoes
  • 2 cups of roast beef cut into half inch cubes
  • 1 finely chopped onion
  • 1 green bell pepper sliced thinly
  • ½ cup of fresh mushrooms, sliced
  • 1 tbsp of vegetable oil

Prick the potatoes with a fork. Put the potatoes in the microwave on a microwave-safe plate. Cook until slightly soft, for 7 – 8 min. Cut the potatoes into small cubes.

Mix the potatoes, roast beef, green bell pepper, onion and mushrooms in a bowl.

Preheat a skillet and throw in the vegetable oil.

Spread everything around on the skillet and let it cook without stirring. About 5 minutes after, flip everything and cook for another 5 minutes until a little crispy.

Roast Beef & Swiss Cheese Hawaiian Roll Sandwiches

What you’ll need:

  • ½ cup of horseradish
  • 1 package of Hawaiian bread rolls (12 per package)
  • 12 slices of roast beef
  • 12 slices of Swiss cheese
  • ½ cup of butter
  • 1 finely chopped onion
  • 2 tbsp of brown sugar
  • 1 tbsp of spicy mustard
  • 1 ½ tsp or Worcestershire
  • 1 tsp of garlic powder
  • 2 tsp of poppy seeds

Preheat oven to 350 degrees F. Coat a 9 by 13 inch baking pan with oil or cooking spray.

Lather the bottoms of the bread rolls with horseradish and cover each roll with a slice of roast beef and a slice of Swiss cheese. Cover with the top of the bread roll.

Melt the butter on a pan over medium heat and cook the onion while stirring in the brown sugar, mustard, Worcestershire and garlic powder, until the onion is soft for about 5 minutes. Pour the onion mixture over the Hawaiian rolls and sprinkle over with poppy seeds. Cover the rolls with aluminum foil

Throw in the oven for about 15 minutes. After 15 minutes, uncover and bake 10 more minutes until the top of is lightly browned.

Pepperoncini Roast Beef Sandwich

What you’ll need:

  • 3 lb of roast beef
  • 4 cloves of garlic (sliced)
  • 1 jar of pepperoncini (16 oz)
  • 8 hoagie rolls
  • 16 slices of provolone cheese or cheese of your choice

What to do with leftover roast beef that’s not yet cooked? Make some cuts into the roast and put slices of garlic into them. Place in a crockpot and pour entire jar of pepperoncini with the liquid over the beef. Then cook in crockpot on low heat for 6 – 8 hours.

If you have already-cooked leftover roast beef, you can place in the crockpot again, if not already. Make the cuts and insert the garlic slices. Pour over the roast with the entire jar of pepperoncini. Cook on low for 30 minutes, then high for about 1 hour. Delicious either way.

Roast Beef Carnitas (for roast still in the crockpot or uncooked)

You’ll need:

·         4 lbs of roast beef

·         1 can of green chile peppers (chopped)

·         2 tbsp chili powder

·         ½ tsp of dried oregano

·         ½ tsp of ground cumin

·         2 cloves of garlic (minced)

·         Salt

The goal of this recipe is to get the beef super tender where it falls apart (if not already). With your leftover cooked roast beef in the crockpot, you can mix all the ingredients listed above in a small bowl, then rub all over (or stir) the leftover roast beef in the crockpot. Heat in crockpot again if you like, until hot.  Remove from crockpot and shred. Serve with tortilla or rice.

For uncooked leftover roast beef: Place roast on a foil big enough to wrap around the beef. Mix all the other ingredients in a separate bowl and rub all over the meat.

Wrap the beef in foil and put on a pan.

Bake at 300 degrees F for 3 ½ – 4 hours, or until the meet falls apart wells using a fork. Remove from the oven and shred. Serve with tortilla or rice.
